Over the last couple years exploring Mezcal, I've come to appreciate not just the complex flavors of this traditional Mexican spirit, but also its deep connection to the environment. At the heart of this relationship are bats - nature's unsung heroes in the world of agave spirits.

However, the booming popularity of mezcal and tequila has led to practices that threaten this delicate ecological balance. Many producers harvest agave plants just before they flower, maximizing sugar content but depriving bats of their vital food source. This not only impacts bat populations but also reduces genetic diversity in agave, making the plants more susceptible to disease and climate change.

The "Bat Friendly" program encourages producers to allow a portion of their agave to flower, supporting bat populations and promoting genetic diversity.
